
This recipe proves that you can cook delicious cutlets without a meat grinder. The secret is to cut the chicken into small pieces with a knife.
From the indicated amount of ingredients, 10–12 cutlets are obtained.
Prepare the necessary products. Wash chicken breast and herbs. Peel the onion from the husk.
Separate the chicken breast from the bones and cut into small pieces with a knife.
Grate the onion and sprinkle over the chopped chicken.
Add one egg
Next, finely chop the greens. I used seven sprigs of coriander and green onions.
Add chopped greens to a bowl with minced meat.
Add one tablespoon of mayonnaise.
Add to the minced meat ingredients one teaspoon of ground black and red pepper and garlic powder.
Instead of garlic powder, you can use 1 clove of freshly crushed garlic.
After the spices, add 80 milliliters of vegetable oil to the minced meat.
Add 2 tablespoons of flour to the bowl and mix with a spoon.
The amount of flour depends on the consistency, density of minced chicken.
Add salt and mix again. I added a heaping teaspoon of salt.
Since the resulting chopped minced meat did not have the density necessary for frying, I added 2 more tablespoons of flour.
Place the bread pulp in a bowl filled with water. I consider it necessary to remind you that milk can be used instead of water.
Take out and plant the pulp of bread in the palm of your hand. Get rid of the water and add the pulp to the minced meat.
Mix thoroughly with a spoon or your hands. Chopped chicken mince is ready.
Start frying.
Put the pan on high heat and pour in vegetable oil. For frying cutlets from one breast, I used 100 ml of vegetable oil.
Since I will form the cutlets with a spoon, I first dip the spoon into a bowl filled with cold water so that the minced meat sticks to the spoon as little as possible.
Take the minced chicken with a spoon and put it in the pan. Try to shape it into a cutlet.
After frying over high heat for two minutes, turn the cutlets over, reduce the heat, cover the pan with a lid and fry over low heat for another 7-8 minutes.
This time is necessary so that the middle part of the cutlet is well baked.
If you notice that after 7 minutes of frying over low heat, the cutlet has not become golden, then fry it for another 30 seconds over high heat.
Chopped cutlets are ready.
