Dalan

Horse fat from the neck of a horse.
In Buryat and Kalmyk cuisine, horse fat is smoked, resulting in a very peculiar tasty dish.
Unlike arbin (the abdominal fat of a horse), dalan is used only for solemn sacrifices.
In a word, ceremonial ritual dishes are prepared from this fat.
