Today I will share with you a way to prepare the most popular New Year's dish in Armenia - pork ham (bacon), baked whole in foil in the oven.
Many cook this dish, however, in almost all inexperienced cooks, the prepared meat remains unflavored, or without salt. In addition to salt and seasoning, the time and temperature of cooking in the oven, which directly depend on the weight of the cooked pork ham, are quite important.
In my opinion, pork weighing from 5 to seven kg is optimal for cooking at home.
My recipe describes how to cook pork ham weighing exactly 6 kg.
When buying, try to choose a ham that is not too fat. Fat thickness not more than 5-7 mm.

How to make delicious pork ham in the oven in foil

Step 1

Rinse pork ham in cold water

Rinse the purchased pork ham in cold water. It can be left in a bowl of water for 1-2 hours. In the area of bone joints, you can make 1-2 thin cuts with a sharp knife to get rid of blood.

Step 2

Getting to the marinade. The amount of marinade depends on the weight of the pork. The ham should completely be under the marinade, so for cooking the marinade, choose a pan in which the meat will completely fit.
Mix all the ingredients of the marinade and bring to a boil.

Step 3

Cool and place the pork ham in the pan with the marinade. In advance, make cuts on the meat with a sharp thin knife, so as to get rid of blood as much as possible, and so that through these holes the ham inside is saturated with salt and seasonings.
We leave the meat in the marinade from 16 to 24 hours. It is advisable to turn and knead the meat every 3-4 hours.

Step 4

We get a ham from the marinade, dry. It is best to put in a bowl and leave for 1-2 hours to completely get rid of the fluid.

Step 5

While the meat is drying, prepare the seasonings. Mix ground peppers - black and red. Number and type of peppers - to taste. Do not mix a lot of spicy, as many can not eat too spicy dishes.
Peel the garlic and cut each clove into slices. Peel the onions and chop finely.

Step 6

First, sprinkle some more salt on the ham, as salt alone in the marinade is not enough. Then grease the entire surface of the meat with pepper mixture.
After pepper, put a clove of garlic in all the cuts and try to push the pepper mixture into these holes.
Press the chopped onion with your hands so that the juice appears, and smear the surface of the meat with the onion. Whenever possible, try to place a small amount of onion in the incisions.
Place the seasoned ham in a plastic bag, collect the onion from the surface of the table and apply the rest of the onion to the ham directly in the bag.
Tie the bag tightly and place the first bag in the second so that the smell of onion and seasoning remains completely inside the bag.
Move the bag of meat to a cool place, in summer you can put it in the lower shelf of the refrigerator.
In this state, the meat should remain a day (at least 12 hours).

We take out the ham from the package. We completely clear the onion slices, if possible we get the pieces of garlic and onion from the cuts.
